ROASTED AUTUMN SQUASH WITH SPICED CIDER GLAZE Ingredients: 1 ea acorn squash or other squash varieties (butternut, delicate) extra virgin olive oil, sea salt black pepper, fresh ground
Procedure: Pre heat oven to 425. Wash squash in cold water. Cut squash in half. Scrape out all seeds with large kitchen spoon. Cut squash into wedges. Place squash pieces in a large bowl and season with EVO, salt and pepper. Stand squash cut-side up on tray. Spritz again with extra virgin olive oil. Roast in 425° oven for 30 - 45 minutes until squash is tender and caramelized. Cook time will vary based on squash type and how big you cut the pieces. Spritz twice with olive oil during roasting and turn tray in oven. Remove Ingredients: from oven and brush squash with spiced glaze.
SPICED CIDER GLAZE Ingredients 2oz Apple cider 2oz Fresh lime juice 2oz Honey, 1tbs Tabasco 1tsp Ginger, fresh, minced Pinch Black peppercorns, Pinch whole Red pepper flakes 2 ea Cinnamon sticks, split Star anise
Procedure: Combine all ingredients in small, non-corrosive sauce pan. Bring to boil over high heat. Reduce to simmer for 5 minutes over low heat then turn off. Allow to steep for 5 more minutes. Drizzle hot glaze over roasted squash wedges. Sprinkle with fresh torn mint leaves.
Pound chicken with a flat meat mallet until 1/4 inch thick. Dredge chicken on both sides in seasoned flour. Sear in hot oil until golden. Remove from skillet. Add mushrooms and shallots, season with salt and pepper. Pour in marsala and reduce. Add stock and simmer. Return chicken to the skillet and heat chicken through. Season with salt and pepper.

Downtown Disney’s Festival of the Seasons Downtown Disney offers a chance for kids of all ages to meet Santa Claus, get a picture taken with the jolly fellow, and make an argument for being placed on the “nice list.” Santa visits from Nov. 19 – Dec. 24, at Santa’s Chalet.
Santa isn’t the only reason to visit Downtown Disney during the holidays, as it offers the Festival of the Seasons, a celebration that includes live entertainment. Choirs and bands entertain guests as they sightsee, shop and dine at Downtown Disney. While there’s plenty of stores to choose from, a stop at Disney’s Days of Christmas is particularly appropriate, perhaps followed by a trip to World of Disney to complete one’s toy wish-list and a cup of cocoa at Ghirardelli Soda Fountain & Chocolate Shop.

Universal Orlando Resort kicks off the holiday season this year with live performances by Christmas music mega-sensation Mannheim Steamroller, who will perform at Universal Studios Florida on Saturday, December 5. The Grammy Award-winning, platinum-selling group will play songs created specifically for the resort’s original holiday stage show “How the Grinch Stole Christmas,” as well as brand-new music from their newly released album Christmasville. Founder Chip Davis will join Mannheim Steamroller in his only scheduled appearance of the holiday season. Mannheim Steamroller has sold more than 30 million albums worldwide. While last year’s Mannheim concert took place in the middle of the Universal streets, this year’s concerts will be performed at Universal’s new Music Plaza stage, which features a 15,000-square-foot viewing lawn that is a whole lot more comfortable to stand on than the crowded theme park pavement.

Elmo, Big Bird and other Sesame Street friends gather together to share with her the true spirit of the holiday. Shamu Christmas … Miracles

Makahiki Christmas Luau
Igniting the spirit of the season is the Makahiki Christmas Luau, a South Seas-style festive celebration including tasty island cuisine keeping with the ancient holiday traditions of the Pacific Islands. Joyful songs of the season are reinterpreted with Polynesian rhythms, music and dance. Makahiki Christmas Luau begins November and continues through into January (except December 25). Park admission is not required.
